According to the Las Vegas Review-Journal, cars backed up along the drive-thru lane at 6215 S. Rainbow Blvd on the morning of May 6, before the doors even opened. Inside, cooks steamed shaved pastrami and dipped buns in broth for the first time at a Las Vegas address that had been promising this exact sandwich since 2019. The Hat, the Alhambra, California institution that has been building pastrami dips since 1951, cut the ribbon on its first location outside Southern California right on the stretch of Rainbow Boulevard that runs along Spanish Trail's border.
If you live inside the gates, you probably already know the sandwich. What's worth knowing is how long it took to show up, and what showed up right behind it.
For most of the last decade, the Rainbow Boulevard stretch near Spanish Trail did its job without doing much else. It moved traffic, it hosted the reliable fast-casual names, and if you wanted more options, you could head toward Chinatown or Summerlin.
The Hat's timeline shows how long the project took. Word first surfaced back in 2019 that the chain was eyeing the same South Rainbow site. That project stalled and never opened. It took until June 2025 for building permits and a company confirmation to make the return official, and another eleven months of construction before the grand opening this spring. A 75-year-old brand with 11 locations across Southern California took several years to make its first bet outside its home market.
The Hat's long path to Rainbow is only one part of the story.
The Hat didn't open into a vacuum. Within the same stretch of months, a small cluster of other operators made their own moves onto Rainbow Boulevard, each one a different kind of confirmation that this corridor has crossed from pass-through to destination.
| Business | Address | What it adds |
|---|---|---|
| The Hat | 6215 S. Rainbow Blvd | First location outside Southern California, open since May 2026 |
| Kickin' Crab | 4190 S. Rainbow Blvd | Vietnamese-Cajun seafood boils, filed for a Las Vegas debut this spring |
| Better Buzz Coffee Roasters | 7120 S. Rainbow Blvd | One of three new Valley locations opened this year, bringing the chain's local count to six |
| Scoundrels Tavern | Rainbow Blvd at Arroyo Crossing Pkwy | Tavern concept that opened in September 2025 near the Home Depot corner |
Kickin' Crab, a Vietnamese-Cajun chain known for bagged, bib-ready seafood boils, filed county paperwork for the Rainbow address this spring, with its license still listed as pending as of late April. Better Buzz Coffee Roasters opened its Rainbow Boulevard store as one of three new Valley locations that brought its local count to six. And south at Rainbow and Arroyo Crossing, Scoundrels Tavern moved into a stretch previously anchored by Panda Express and Qdoba, betting that a full tavern concept could work in a location that used to be strictly quick-service.
None of these are Strip-adjacent splashy openings chasing tourists. Together, these openings add coffee, seafood, and a tavern to a corridor that also has counter-service and drive-thru options.
Here's what's easy to miss if you only follow the new openings: Rainbow Boulevard already had one destination worth knowing about, and it looked like nothing from the parking lot. Rainbow Kitchen, a dim sum and Chinese seafood spot on the corridor, has quietly built a following among people who got tired of driving to Chinatown for a lobster and Peking duck dinner. It's the kind of place regulars describe as easy to walk past for years before realizing what's actually happening inside.
That's the pattern worth sitting with. The corridor wasn't empty before this year. It had one strong, under-the-radar option and a range of fast-casual options. What changed in 2026 is density, not discovery. Multiple operators arrived within the same stretch of months, adding new options to Rainbow Boulevard.
Everything above happens outside the gates. Inside them, Spanish Trail Country Club has been running its own food and social calendar for years, independent of whatever opens or closes on Rainbow Boulevard.
The club's dining room, known to members as The Farms, keeps a small kitchen crew that leans into theme dinners and summer Friday night barbecues on the terrace, according to a Club + Resort Business feature on the property's operations. Friday nights also bring live entertainment to the bar, a tradition still running as of last year, drawing members and guests who stick around after a round of golf on the club's 27 holes. That golf course, a three-nine-course layout designed by Robert Trent Jones Jr., has hosted the PGA Tour's Las Vegas Invitational and currently serves as the home course for the UNLV women's golf team.
The two food lives of Spanish Trail rarely overlap, and that's the point. One runs on a private membership calendar. The other just got a lot more interesting on the drive home.
Add in the 50,000-square-foot clubhouse itself, with its glass-lined dining rooms, a renovated fitness center, two aquatic centers, and twelve lighted tennis courts, and you get a second, entirely self-contained version of neighborhood life that has nothing to do with what's opening at Rainbow and Arroyo Crossing.
Before this year, a Spanish Trail resident's food options included the club, Rainbow Kitchen, and a drive across town for something worth the trip. What actually changed in 2026 isn't that the club got better. It's that the drive across town got shorter, because a chain that waited seven years finally said yes to the same street you're already on, and a handful of other operators followed within months.
That's not a dramatic transformation. It's a corridor quietly proving it can support more than pass-through business, one lease signing at a time. If you've lived here through the years when Rainbow Boulevard meant Panda Express and a promise about a sandwich shop that never showed up, this is the year that promise finally paid off.
If you're weighing what a home inside Spanish Trail is worth against everything the neighborhood now offers, on both sides of the gate, the team at Teresa McCormick Group knows this corridor and this community well enough to walk you through it. You can start by exploring the Spanish Trail neighborhood guide or get an instant home valuation whenever you're ready to see where your home stands today.
